CHIVE-SHALLOT VINAIGRETTE
Serve this warm vinaigrette drizzled over a grilled shellfish or seafood salad. It is also a great basting mixture for meats and vegetables.
4 shallots, finely chopped
3 cloves garlic, minced
4 tablespoons butter
4 tablespoons white wine vinegar
1 tablespoon lemon juice
2 tablespoons snipped chives
1 tablespoon snipped Italian parsley
½ cup olive oil
Sauté shallots and garlic in butter over medium-low heat until soft for about 5 minutes. Add vinegar, lemon juice, chives, and parsley and sauté for 2 minutes more. Whisk in olive oil, then remove from heat. Store in an airtight jar in the refrigerator for up to 5 days.
Makes about 1¼ cups
